eiffelstudio: Restore ISE_PLATFORM env var

Per Eiffel Studio documentation, this environment variable should
be set. Without it, running `brew test` throws a warning message.
Also enhanced the formula test to run from bin/ instead of prefix/

Fixes #37077.
